Tuna and Broccoli Wholegrain Pasta

Ingredients:
250g wholegrain pasta
200g canned tuna in water, drained
200g broccoli florets
2 tablespoons olive oil
2 cloves garlic, minced
100g cream cheese
50ml milk
Zest of 1 lemon
Salt and black pepper to taste
1 tablespoon fresh parsley, chopped
Instructions:
Cook the Pasta and Broccoli: Bring a large pot of salted water to a boil. Add wholegrain pasta and cook according to package instructions. In the last 3 minutes of cooking, add broccoli florets to the pot. Drain and set aside, reserving some pasta water.
Prepare the Sauce: In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Combine Ingredients: Add cream cheese and milk to the pan, stirring until smooth and creamy. Mix in the lemon zest and season with salt and pepper.
Add Tuna and Pasta: Stir in the drained tuna, cooked pasta, and broccoli. Toss to combine, adding a little reserved pasta water if needed to achieve desired consistency.
Serve: Divide among plates and garnish with fresh parsley. Serve warm and enjoy!
