Hearty High-Protein, Low-Carb Recipe: Sweet Potato & Spinach Frittata

Sweet Potato & Spinach Frittata

This frittata is an excellent way to enjoy the creamy texture of sweet potatoes paired with the earthiness of spinach, all enveloped in a fluffy egg base.


Ingredients:

200g sweet potatoes, peeled and thinly sliced

100g fresh spinach

6 large eggs

1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, minced

50g feta cheese, crumbled

Salt and black pepper to taste

A pinch of nutmeg (optional)


Instructions:

Preheat the Oven: Set your oven to 180°C (356°F).

Sauté the Vegetables: Heat olive oil in an ovenproof skillet over medium heat. Add the onion and garlic, cooking until the onion is soft. Add the sweet potato slices and sauté until they begin to soften. Stir in the spinach until wilted.

Prepare the Egg Mixture: In a bowl, whisk together eggs, salt, pepper, and a pinch of nutmeg. Ensure it is well mixed.

Combine and Cook: Pour the egg mixture over the vegetables in the skillet. Sprinkle crumbled feta cheese on top. Cook on the stovetop over low heat until the edges start to set, about 5 minutes.

Bake the Frittata: Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is fully set and lightly golden on top.

Serve: Allow to cool slightly before slicing. Serve warm or at room temperature.
