Chicken and Vegetable Stir-Fry with Wholegrain Rice

This recipe provides the perfect combination of tender chicken, crisp vegetables, and nutty wholegrain rice, all brought together with a simple yet flavorful sauce.


Ingredients:

2 chicken breasts (about 300g), thinly sliced

1 cup cooked wholegrain rice

1 tablespoon olive oil

1 red bell pepper, sliced

100g broccoli florets

1 carrot, sliced

2 cloves garlic, minced

2 tablespoons soy sauce (low-sodium)

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

Salt and black pepper to taste

2 spring onions, sliced for garnish

Sesame seeds for garnish (optional)


Instructions:

Cook the Rice: Prepare the wholegrain rice according to package instructions and set aside.

Sauté the Chicken: Heat olive oil in a large frying pan or wok over medium-high heat. Add the sliced chicken, cooking until golden brown and cooked through. Remove from the pan and set aside.

Cook the Vegetables: In the same pan, add broccoli, bell pepper, and carrot. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

Add Flavour: Add garlic and ginger, cooking for 1 minute until fragrant. Return the chicken to the pan, then stir in soy sauce and sesame oil. Toss everything together until well coated and heated through.

Assemble: Stir in the cooked wholegrain rice, mixing well to combine all the ingredients.

Serve: Divide the stir-fry into bowls, garnishing with sliced spring onions and sesame seeds if desired. Serve hot.
